Milchschokolade Mélissa mit 45% reinem Criollo-Kakao aus Madagaskar. Die “Single Plantation”-Schokolade wird aus Kakaobohnen von nur einer einzigen Plantage hergestellt. Verglichen mit anderen Milchschokoladen hat die Mélissa von François Pralus mit 45% einen sehr hohen Kakaoanteil. Der intensive, aromatische Kakao-Geschmack ist sehr ausgewogen mit Noten von Karamell und Honig.

Der französische Schokoladenhersteller François Pralus/PATISSERIE CHOCOLATERIE PRALUS - 34, rue Général Giraud, 42300 Roanne, Frankreich, www.chocolats-pralus.com, contact@chocolats-pralus.com - ist eigentlich gelernter Konditor. Nach der Übernahme der Pâitisserie seines Vaters im Jahr 1988, begann er mit Schokolade zu experimentieren, woraus sich im Laufe der Zeit hervorragende Schokoladenkreationen entwickelten.

Er ist einer der wenigen französischen Hersteller, die von der Bohne an Schokolade herstellen (bean to bar). Bezeichnend für Pralus-Schokoladen ist, dass er nur Kakabohnen aus den besten Anbaugebieten der Welt verwendet, vor allem aus Südamerika und Indonesien.

Besonders interessant sind seine 75%-Kakao-Schokoladen, da hier der Einfluss von Anbaugebiet und Kakaosorte auf den Geschmack deutlich wird.
